To the west of the Italian peninsula, and just south of Corsica lies a richly diverse island. The second largest in the Mediterranean. On The Food Journey, we are taking you to the beautiful island of Sardinia. Not as well-known as the other Italian regions, Sardinia is a wonder to be discovered. A very long coastline, filled with pristine and clear-blue beaches, snow-capped mountains, rolling hills and beautiful plains, contribute specific ingredients to Sardinian cuisine. The interior brings meat, dairy products, grains and vegetables. While the sea generously offers scampi, bottarga, squid, and tuna. Its rich cuisine is also the result of centuries of influences. Like other small regions, Sardinia had its fair share of empires through the ages: Byzantine, Aragonese, Spanish and Savoyard. They all left a trace in Sardinian rich culture and cuisine. Let’s discover a bit more about the Sardinian cuisine. Today, our guide is Chef Gianni Melis who’s been established in Sardinia for 12 years. The interview is in Italian.
