I spent a lot of time at my grandparent's house growing up. I would walk there after school and spend the whole day in the summer when my parents worked. Talking about my favorite lunch takes me right back in time.
In this episode, Judy and I talk about grandma's cooking and about watermelon parties. We get into things like jello add-ins and burned bacon. It's a peek at my personal culinary history.
Here is the recipe for mom's Holiday Veggie Jell-O Salad:
1 pkg (6 ounces) lime Jell-O
2 c boiling water
1 1/2 c cold water
2 c finely shredded cabbage
1 c finely shredded carrot
1 c crushed pineapple, well-drained
1 c mayonnaise
Combine the lime Jell-O with hot water in a large bowl, stirring until dissolved.
Stir in cold water.
Immediately add vegetables and pineapple. Pour mixture into a wreath-shaped mold. Refrigerate until mixture has set (about 2 or 3 hours).
Refrigerate the salad for several hours more or overnight. Unmold by dipping into hot water for 10 seconds.
Serve with a "sauce" of 1 cup mayonnaise placed in a small bowl in the center of the wreath-shaped Jell-O. Spoon onto salad as it is served.
