But, what not everyone knows is the story behind this amazing company. Jackson’s Chips is named after Megan’s son Jackson, who at a young age was diagnosed with a rare autoimmune disease.
After many difficult years, they discovered that his diet played a huge role in how he felt. Jackson began implementing a low-carb, high fat diet with emphasis on quality ingredients, like coconut oil. Eventually their whole family adopted this diet, but they missed eating chips, so they created their own.
Jackson’s Chips uses simple, healthy, and limited ingredients like potatoes, coconut oil, and avocado oil.
Megan, her family, and their company Jackson’s Chips are a perfect example of those who are a part of the Rooted community. Their use of ancestral fats is making a positive difference in people’s health and our food system. As they continue to pursue a very personal and purposeful mission, Jackson’s legacy lives on.
