Bill Lark is the founder of Lark Distillery and is rightfully known as the Godfather of Australian Whisky. When Bill first pondered producing single malts in 1992, distilling whisky was still illegal in Tasmania due to archaic laws passed in the mid-1800s. Now, thanks largely to Bill, Tasmania’s ideal conditions for malt whisky are home to many a distillery that have followed in his footsteps, and the industry in Australia more generally commands respect. We finally got hold of Bill for an interview, and couldn't be more grateful for him finding the time in his schedule that remains jam-packed despite his decision to step back from the day-to-day running of the distillery a few years ago. We jumped straight in to explore his little-known background, his predictions for the ever-growing distilling industry in his home country and what a month in the life of Bill Lark entails. We're confident you'll have nothing but admiration for this gentle giant who is an absolute lover of life!
