Falling into the industry at a young age in a regional town Dave Clarke (Sydney Collective Group) had no idea where his career could take him. But after time on the pans in Quay a whole new world of skill, commitment and connection opened up in front of him. It led to a role with Jamie Oliver’s group down under and some of the largest groups, including his current role where he is integral in taking pub dining to a new level down under.
