Author Note: In the podcast, Ashleigh gives recommendations for how long before leftovers must be refrigerated or thrown away. These recommendations are provided for foodservice professionals who have prior approval from the local regulatory authority to serve food without temperature control. The consumer recommendations for handling leftovers are as follows: Cut the turkey into small pieces and refrigerate turkey, stuffing, and gravy separately in shallow containers within 2 hr of cooking (or 1 hr in temperatures above 90 °F).
