Michael's Butter Mochi recipe:
Ingredients:
- 2 cups mochiko sweet (white) rice flour
- 2 cups sugar (I recommend Domino Organic Cane Sugar)
- 2 teaspoons baking powder
- 1/4 teaspoon ground cinnamon
- 1 (12 ounce) can evaporated milk
- 1 (14 ounce) can coconut milk
- 3 eggs
- 2 teaspoons vanilla
- 1/2 cup butter, melted
Note: If not using Cane Sugar, you may want to use a little extra (but no more than 2 and 1/2 cups.)
Directions:
1 - Preheat oven to 350 degrees.
2 - Grease a 13x9x2" pan.
3 - Melt and keep butter on very low heat (just enough to keep it liquid.)
4 - In a large bowl, sift together flour, sugar, baking powder, and cinnamon, and mix well.
5 - In a medium bowl, combine evaporated milk, coconut milk, eggs, and vanilla, and mix well.
6 - Make a well in the dry ingredients and incorporate the liquid ingredients.
7 - Stir in melted butter until it's absorbed and the mixture is completely smooth (no lumps).
8 - Pour into pan and tap pan to settle batter.
9 - Bake (uncovered) for 50-55 minutes in center of oven until golden brown.
10 - Cool at least 2 hours before cutting.
