This weeks episode highlights an odd but tasty pairing. Txakoli (CHAK-oh-lee), a slightly effervescent Basque white wine is matched up with Chirps cricket flour pasta. Cricket flour is an interesting addition to the pantry. Very high in protein and super sustainable, it adds a nutty flavor to recipes. The acidity and crispness of the Txakoli pairs well and is definitely on the list as great seafood wine! The "new spring sipper".
