Dr. Hu describes UPEI's unique design-based teaching approach, emphasizing hands-on learning.Often regarded as a by-product, Dr. Hu and her team are converting potato peels into energy. Using a gasification process, they mix potato peels with sawdust to produce hydrogen. This makes good use of what is sometimes discarded that the potato processing industry generates in PEI. Additionally, Dr. Hu discusses converting other organic waste and agricultural byproducts into bio-oil as an alternative fuel source for cars and trucks.  Fuel, power, and french fries all from the mighty potato.There is a growing interest among students in alternative energy and the promising future for individuals studying and working in this field, and Dr. Hu’s team is just getting started.
