Episode Synopsis
This recipe gives time to get things done. It’s a multi-tasking dream. While this is going on, I pack lunches and wipe counters. Because sometimes chicken is thick and takes longer than you plan. But, when you use thighs, it’s worth the extra time and they turn out juicy every time!
Quick chicken tip:
Covering them creates steam and helps them to cook faster and also to keep the juice in.
Generally, I don’t tell stories with my recipes, I’m going to make an exception with this one. With a super short story. No seriously, short!
I heart gnocchi. The pillowy goodness is so fluffy and yummy. It’s like they soak up all the flavor you soak them in. (In fact, if you want to soak up the sauce flavor more, you can steam the gnocchi in the sauce instead of cooking it in a pan).
Originally I was going to use a different gnocchi tonight. An inside out gnocchi. Where it’s traditional potato, filled with sauce and cheese. So good! I was going to air fry them, and serve with sautéd kale mix with a little bacon over it.
But. This weekend when I went to Trader Joe’s, the cauliflower gnocchi was back in stock! So I picked that up and changed up my plan for the night. No worries. I’ll do the other recipe next week!
