After spending the last nine years turning his award-winning venue into the benchmark local sustainable restaurant Kane Pollard (Topiary and Sôl Bar & Restaurant) he took the opportunity to take his knowledge and ideas to a larger scale at a brand new restaurant on top of Skycity Adelaide. With a determination to create a sense of place on the plate and ensure a perfect circle of sustainability, its proving to be the most challenging and fulfilling challenge he’s had.
