Ingredients: 2 lbs (900 g) beef chuck roast, cut into 1-inch cubes 1/4 cup (60 ml) all-purpose flour Salt and pepper to taste 6 slices bacon, diced 1 onion, diced 2 carrots, peeled and diced 2 cloves garlic, minced 2 cups (480 ml) red wine, such as pinot noir 2 cups (480 ml) beef broth 1 tbsp (15 ml) tomato paste 1 tsp (5 ml) dried thyme 2 bay leaves 1 lb (450 g) mushrooms, sliced 2 tbsp (30 ml) butter 2 tbsp (30 ml) all-purpose flour Chopped fresh parsley for garnish Instructions: Preheat the oven to 350°F (180°C). In a bowl, toss the beef cubes with 1/4 cup (60 ml) of flour and salt and pepper to taste until well coated. In a large Dutch oven or oven-safe pot, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside. In the same pot, add the onion and carrots and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more. Add the beef cubes to the pot and cook until browned on all sides, about 5 minutes. Add the red wine, beef broth, tomato paste, thyme, and bay leaves to the pot and stir to combine. Bring the mixture to a simmer. Cover the pot with a lid and transfer it to the preheated oven. Bake for 2 hours, stirring occasionally. While the beef is cooking, melt the butter in a pan over medium-high heat. Add the mushrooms and cook until they are browned and tender. Sprinkle 2 tbsp (30 ml) of flour over the mushrooms and stir to combine. Cook for 1-2 minutes more. When the beef is done, remove it from the oven and discard the bay leaves. Stir in the bacon and mushrooms. Garnish the beef bourguignon with chopped fresh parsley and serve hot.
