Casa Bonita is a long standing institution in Denver, CO.  It’s been made famous by Trey Parker and Matt Stone in their South Park series. (You may want to check it out.) In 2021, Casa Bonita went bankrupt.

 

That summer, Trey and Matt bought the restaurant out of bankruptcy and have been refurbishing ever since.  In May, they announced that they were almost ready to reopen with updated building, new chef, and a $40 million investment in improvements.

 

Now, 50 employees have come together with demands of better pay and work conditions. Have they gone too far?
