It comes at a perfect time on New Year's Eve, especially for champagne lovers, giving us an even better excuse to pop open a bottle — or two! Genuine champagne only comes from France's Champagne region. French law protects where and how it is made. Unlike other wines, Champagne ferments in the bottle allowing the vintner to trap the CO2 in the bottle. The bubbles give Champagne its effervescence.  If it's not from France...it's called: prosecco, sparkling wine, cava, cremant, and espumante.
