Participants got  ready for another cooking adventure. This time: Japanese Chicken Curry Stew presented by Sherrie. If you cook along, you need the following:

2 LBS Chicken thighs, skin on and boneless
4 TBSP Neutral oil, divided.
1 Large Vidalia onion-chopped
3 Large carrots-peeled and chopped or one 16ounce bag baby carrots-whole
2 Large Yellow Finn or Yukon gold potatoes-peeled and cubed
3 Cups Chicken or vegetable stock-plus more if needed
Half a box curry roux blocks-chopped-House Vermont brand used in this recipe-S&B brand also a good option
2 TBSP Cornstarch
cold water
