Most players in the plant-based industry use processing techniques to optimize qualities like easily digestible protein and taste, and minimize qualities like off-flavors. Oswald Crasta, vice president of research and development for Equinom, sees a different solution. He mines a plant DNA database to create strains of peas and beans that have those desirable qualities at the time of harvest.
