Here's the recipe from today's show!
One Pot Sausage and Veggie
Ingredients:
2 cups baby (or regular) potato, rinsed and cut small
1/2 red pepper, sliced
1/2 yellow pepper, sliced
1/2 zucchini, halved and sliced
1/2 onion (white or yellow), sliced and diced
1 package sausage, halved and sliced
3 tablespoons olive oil
1/2 teaspoon garlic powder
1 tablespoon Italian seasoning
1/2 cup chicken broth
salt and pepper
Directions:
Wash your hands, then wash and dry potatoes, peppers, and zucchini. Prep all of it so you'll be ready when the time comes to add everything! Heat olive oil in a pot on about medium heat, add the potatoes, seasoning with salt and pepper. Fry until golden brown and cooked(8-10 mins). Once cooked, remove potatoes from the pot and set them aside.
Using the same pot, brown the sliced sausage with 1 tbsp of olive oil. Once cooked, remove from the pot and set aside.
Same pot again, add the diced onion and garlic powder, cooking for 1-2 minutes with the remaining oil. Add the pepper and zucchini, season with Italian seasoning, salt and pepper, cooking until softened (~2 mins)
Add the sausage and potato back into the pot and mix everything together. Add the chicken broth and cook for 5 more minutes. Adjust seasonings as needed and serve! Garnish with parsley and enjoy!
You can use any kind of sausage you'd like for this recipe, or if you're in Germany, I know there's different varieties of sausages that I don't even know about! So feel free to experiment, but whatever you do, have fun and enjoy!! There's no greater joy than making something in the kitchen that tastes delicious.
