Yesterday, Sunday on our end, was a lazy rainy day. I honestly wasn’t even excited to open the shop. Weather like this just makes me want to curl up in bed, hug my pillows, and stay under the blanket. After all, it was Sunday. Still, we managed to open the shop around noon.
Rainy days like this are also perfect for enjoying hot dishes. In the Philippines, we usually cook warm delicacies during the rainy season.
We were happy when Mom prepared something special for our siesta. She made totong, a rice porridge cooked in coconut milk with red beans.
While Mom was busy with the totong, I experimented with a snack using the 8-in-1 sandwich maker I recently bought. I don’t even know what to call it. I just used the cookie-shaped plate of the sandwich maker.
I mixed coconut flakes, pancake flour, water, and sugar. For the filling, I added chocolate and cheese. The result was amazing. It tasted like soft cookies with a taste of puto or rice cake. I even thought about adding it to our shop’s menu, maybe with different fillings.
When everything was ready, I made a cup of hot chocolate using unsweetened cocoa powder. The taste was so comforting, and it paired perfectly with the totong and my newly discovered snack.
